The Cortés family, after 5 generations give us a great lesson: It is always a good result when it is done from the heart. Agave de Cortés Añejo is made from 100% Espadín agave from Santiago Matatlán, Oaxaca, the well-known "Mezcal Capital of the World". Using traditional methods, agaves are roasted with volcanic rock. Crushed using a horse drawn stone tahona. Fermented in pine wood vats, and double distilled in copper alembic stills. Agave de Cortés Añejo is then aged for 6 months. Maestro Mezcalero: Leoncio Santiago Palenque: Dainzú  43% ABV 25.4 standard drinks

Traditional, artisanal mezcal forms an important part of rituals, ceremonies and festivities - known as "Jolgorios" - in villages in Oaxaca, México. Barril is a rare subspecies of the Karwinskii species of agaves that grows wild at high elevations. At its core is an elongated stalk-shaped piña with dense sugars and very little water, which results in a mezcal of great complexity, balancing sweetness, citrus, and often a distinct minerality.     47% ABV 27.8 standard drinks
El Jolgorio Mezcal Espadín 750ml

Traditional, artisanal mezcal forms an important part of rituals, ceremonies and festivities - known as "Jolgorios" - in villages in Oaxaca, México. Agave Espadín is the most prevalent species of agave in Mexico and reaches maturity earlier (5-10 yrs) than most other agaves. It also grows to be relatively large with a high sugar content, making it perfect for mezcal production. Due to the abovementioned factors, Espadin is easily the most produced (and consumed) variety of mezcal.  However, only the most unique lots of mezcal Espadín are bottled under the El Jolgorio label, often being produced in remote areas or being rested in glass for several years prior to bottling to allow for the spirit to mellow and its flavors to develop fully.    47.8% ABV 28.3 standard drinks

A genetic relative of Agave Espadín, Agave Mexicano grows to be very large. With its broad serrated leaves (or pencas) often bearing black tips. El Jolgorio Mezcal Pechuga 750ml

Traditional, artisanal mezcal forms an important part of rituals, ceremonies and festivities - known as "Jolgorios" - in villages in Oaxaca, México.  El Jolgorio Mezcal Pechuga is produced from 100% semi-wild Agave Espadín (Agave angustifolia).  El Jolgorio Pechuga is made using two distillations. On the second distillation, the mezcalero adds locally harvested fruit and spices, such as pineapple, orange, plantains, anise, to name a few. Also on the second distillation, the mezcalero hangs a raw guajolote - a creole turkey rooster of the region - on the inside of the pot still.  Unlike the other mezcal expressions in the El Jolgorio range, Pechuga is not named for the species/variety of agave it is made from, but rather is a celebratory style of Espadín mezcal. Burrito Fiestero is made out of agave cenizo, endemic to the state of Durango. This maguey takes from 10 -13 years to mature. Once naked from its spikes, it is carried and transported by donkey down the mountain to begin with the elaboration process.
